Roasted Sweet Potatoes with Sautéed Mushrooms and Broccoli
This is a combination of sautéed and roasted vegetables which makes for a great vegetarian lunch or dinner. I love everything about this dish; the texture of the mushrooms, the caramelized sweet potatoes and the mouth-watering broccoli – all in one plate! This yummy veggie combo is a rainbow of colours and a joy of taste.
The roasted sweet potatoes are crunchy on the outside and soft on the inside. They are so easy to make – all you need to do is cut them into medium-sized pieces and throw them in the oven. Read the full recipe here.
Once the sweet potatoes are in the oven, you can start prepping the broccoli. In only a few minutes, your broccoli florets will be sautéed with the crushed garlic and a bit of soy sauce for an extra touch of flavour. Here’s an easy peasy recipe for the sautéed broccoli with garlic.

Each of these three veggie dishes are great on their own, but they are even better when combined. There’s no shortage of flavours when it comes to this one, I’m telling you. A pure culinary symphony is what this is.
