Gluten & Sugar Free Protein Squares

We’ve had the most amazing autumn here in Dublin and I’ve been spending most weekends hiking and exploring. These protein squares are the absolute best when it comes to snacking on the go. Whether you are out and about for an entire day or at work for most of the day, you need to take these with you! The oats contain the much needed fibre; the nuts are full of healthy fats, while the peanut butter keeps you fuller for longer. Plus, they are naturally sweet and gooey, which makes them the best treat ever.

Yields: 12 squares

Ingredients

For the base

  • 1 cup oats
  • 1 cup almond flakes
  • 1 cup whole almonds
  • 1 cup soft & juicy raisins
  • 1/2 cup dates (soaked in water)
  • 4 tbsp coconut oil (melted)
  • 5 tbsp maple syrup

For the cream

  • 2 tbsp cocoa
  • 500gr smooth peanut butter
  • 7-8 tbsp maple syrup

Method

For the base

  • Start by soaking your dates in hot water for at least 10-15 minutes to make them softer
  • Add all ingredients for the base (except for the coconut oil) in a food processor and pulse until it forms a smooth flour – approx. 3-4 minutes
  • Add the 4 tbsp of melted coconut oil & pulse until you get a thick, sticky mixture
  • Line a 33 x 22 x 4cm baking tray with parchment paper and spread all the mixture evenly. Press it well with your hands or a spoon and refrigerate for 30 min until it cools down and it’s stiff enough.

For the cream

  • In a bowl – mix all the cream ingredients until smooth
  • Spread this cream on the base
  • At the end, add a few drops of maple syrup on the top. Spread it out and flatten it with a spoon until it’s all nice and uniform. This will give it a caramel-like texture. Refrigerate for 1h or overnight.

I’ve been feeding so many of my friends with these lovely little squares, and everybody loved them! They last for about a week if refrigerated and they are a great substitute for unhealthy snacks and regular protein bars. What I most love about them is their texture. I’ve never had protein bars that are so chocolaty, deliciously healthy and so filling!
