Cocoa & Strawberry Chia Pudding

A few months ago I was wondering what’s with all the fuss about chia puddings. While I had been using chia seeds in cakes, smoothies and even salads, I had never made a chia pudding. My first attempt was a ridiculously watery mixture of hard chia with lumps of cocoa, but I didn’t give up! After a few chia pudding trials, I’ve come to the conclusion that it’s actually very easy to make, as long as you let it soak overnight. You want your chia seeds to be fully soaked in the almond milk and expand as much as possible, to get a nice creamy texture.

The cocoa in this recipe makes for an amazing chocolate substitute and it goes so well with the sweet strawberries, while the maple syrup gives it an extra touch of natural sweetness. What I love about chia pudding is that’s so easy to make: 3 steps and a handful of ingredients is all you need. Plus, you can play around with the toppings depending on what’s in your cupboard at the moment.

Serves 1

Ingredients

  • 5 tsp chia seeds
  • 1 tsp cocoa
  • 100 ml almond milk
  • 4-5 strawberries
  • 2 tbsp maple syrup

Method

  • Start by mixing the chia seeds, almond milk, cocoa and 1 tbsp maple syrup
  • Let the chia seeds soak overnight in the fridge
  • In the morning, cut the strawberries, place them on top of the pudding and drizzle with 1 tbsp maple syrup.

Enjoy cold as breakfast, dessert or morning snack.
