Hello everybody! It’s nice to get back on the blog with a new, refreshing recipe, ideal for the last month of summer.
I’ve been so excited about this salad ever since I’ve first made it a couple of months ago. My fridge was nearly empty and so were my cupboards. All I had was a tin of butter beans, green onion, feta cheese, lettuce and plum tomatoes. You can pretty much guess the method – mix everything together, season and serve. That’s why I love salads so much. They’re so easy to make and the varieties are literally endless. Change one ingredient and you’ve got yourself a completely different taste and texture.

Serves 1 hungry salad lover
- A handful of lettuce
- 7-8 plum tomatoes
- 150g feta cheese
- 250g cooked butter beans
- 1 green onion (chopped)
- Dressing (sea salt, olive oil, lemon, balsamic vinegar)
- Mix everything together, season and enjoy
The reason I’m so hooked up on this butter bean and feta salad is because it’s rich in protein and it keeps me going for hours. Butter beans contain healthy carbs and are low in calories and fat. 1/2 cup of butter beans provide you with 10 percent of the daily value for iron and zinc and 15 percent of the daily value for magnesium. Eating butter beans on a regular basis can help lower the risk of heart disease and promote a healthier weight. And don’t we all want that?
